Preheat the oven to 400°.
In a skillet on medium-low heat, melt the butter, sugar and syrup. Once melted, add the flour, baking soda and ginger in a bowl and gradually mix. Once combined, the melted ingredients should form a ‘dough’. If the dough seems runny, add more flour.
Divide the dough in half. Put on separate baking trays lined with a sheet of baking paper and bake for 10-12 minutes. Take out and allow to cool somewhat.
Once somewhat cooled, cut into small sandwich-like squares. To build the sandwich, place blackberry ice cream on the bottom square, and top with another. Continue until the entire crumble is used and all sandwiches are created.
